Goosefoot, Fetid - Chenopodium graveolens HABITAT: In the shade of pine and juniper, occasionally in open dry plains, ridge tops and waste areas, or cultivated ground from 2,700 to 8,400 feet. RANGE: Louisiana to Arizona, north to Colorado; also Maine, New York and Massachusetts. EDIBILITY: Leaves and Seed. The leaves and young shoots are cooked and eaten like spinach. The dried seed is ground into powder and mixed with flour to make bread. The seed should be soaked in water overnight, then thoroughly rinsed to remove any saponins, then dried before grinding. The raw leaves should only be eaten sparingly.

Dill - Anethum graveolens HABITAT: Fields and waste areas. RANGE: Quebec to British Columbia, south to Virginia, Louisiana and California. EDIBILITY: Leaves and Seed. The raw leaves are used in salads. The leaves lose their flavor if cooked for any length of time and are best used raw or added to cooked dishes when cooking is nearly complete. The pungent, bitter seeds are used raw or cooked. They are used to flavor salads, soups and preserves such as pickles.
